I have just completed my new wine cellar. All of the publications that I have received with my cooling unit say to keep the temperature at 55°F to 65°F. This is a large range. I've also read that for reds (which I have predominately), should be kept it at 58°F. Can you provide an expert opinion on what the best temperature overall to keep my cellar at?
